Christmas Dinner Inspiration
Who doesn’t love a feast at Christmas?
At the Kitty Kitchen casa we love to share our festivities with our two rescue girls Nara and Cookie. In preparing for this year’s feast, I thought that it might be great to share a recipe that you can create and eat with your kitty this Christmas.
This great recipe by Barbara Taylor-Laino is easy to prepare and delicious (or is that meowlicious?) Photo courtesy of kevin turcios. This is a favourite in the Kitty Kitchen casa especially at this time of year.
Turkey and Veggie Frittata
Ingredients:
140g cut-up cruciferous vegetables such as broccoli, cauliflower, and/or Brussel sprouts. Cut these into even sized pieces.
4 or 5 eggs (we prefer organic or free range)
280g cooked turkey meat. Cut the meat into bite sized pieces.
1 teaspoon of paprika
1 teaspoon of tumeric
1 tablespoon of olive oil (again organic where possible)
Directions:
Bring approx. 705ml of water to the boil in a medium saucepan. Add the vegetables and simmer for about 10 minutes or until fork-tender. Remove from the heat and drain.
Beat the eggs in a large bowl then add the turkey, vegetables, paprika, and tumeric. Mix well.
Warm the olive oil in a large skillet over low heat, coating the bottom of the skillet lightly with the olive oil. Once the oil is hot, pour in the egg mixture. Cover and cook over a very low heat until the centre is relatively solid, usually about 20-30 minutes. Remove from the heat and once cool cut into approximately 8 slices ready for serving.
Serving:
Feed one slice (1/8 frittata) to a medium sized cat. For a smaller or larger cat adjust accordingly.
The frittata can be frozen or stored in the refrigerator in an air tight container. Remember to be portion-wise.
PURRFECT OPTIONS
You can also substitute chicken for turkey and seasonal veggies such as zucchini, asparagus and yellow squash.
We’d love to see your pics if you try this recipe!
